Dishes that were once strictly confined within regional contexts are now being reinterpreted and fused repeatedly around the world. However, this fluidity has two sides. There is a concern that in the pursuit of convenience and efficiency, the stories behind traditional cooking methods and ingredients are stripped away, leading to a homogenization of food culture. Our choices about what we eat go beyond mere preference and are directly linked to the question of how we define and inherit our own identity.
