In the history of human food, the phenomenon of fermentation has transcended mere preservation technology to shape cultural identity itself. This process, which controls the activities of microorganisms and dramatically alters the structure of ingredients, is effectively alchemy at the dining table. The boundary between decay and fermentation is extremely ambiguous, and one cannot help but be amazed by the wisdom of our predecessors who could smell and utilize those subtle differences. In modern society, fermented foods are often discussed in the context of health-consciousness. However, true fermentation should have been an endeavor to sublimate the chaotic energy of the natural world into a form suitable for human survival. This technology, which stands at the opposite pole of industrial production that demands efficiency and homogeneity, may be questioning us about the tolerance we have forgotten—the ability to accept uncertainty.
