In an era of mass production and mass consumption, food loss has become a serious social problem. The amount of food discarded despite being edible is enormous, and it is a situation that cannot be overlooked from the perspective of environmental impact as well. Excessive inventory management at restaurants and retail stores, as well as overbuying by consumers, are considered the main causes. We are being urged to reform our consciousness to buy only what we need and use it up. To solve this problem, not only individual efforts but also system improvements across society are essential. Examples include reviewing how expiration dates are displayed and creating mechanisms to effectively utilize unsold food. It could be said that it is our responsibility to the next generation to aim for a sustainable diet without forgetting to cherish the source of life that is food.
